The Maison Dorée Story
Maison Dorée began not as a business plan, but as a promise. In 2011, Chef Amélie Rousseau left a celebrated three-Michelin-star kitchen in Lyon to open a single, small counter in the 6th arrondissement of Paris — six seats, one oven, and an unwavering belief that butter, flour, and time, handled with total devotion, could become something transcendent.
What started as a neighborhood secret soon became a pilgrimage. Word spread not through advertising, but through those who tasted a single bite of our sablé Breton or watched a mille-feuille built layer by layer at the counter, and understood that something rare was happening. Today, Maison Dorée operates two ateliers — in Paris and New York — but the philosophy has never changed: nothing leaves our kitchen until it is worthy of the name.
Every croissant is laminated by hand across three days. Every cake is finished to order, never displayed under glass for more than a few hours. Every loaf of bread is fermented for no less than eighteen hours. We do not chase trends. We chase perfection, one layer at a time.
Founder
Chef Amélie Rousseau
Chef Amélie Rousseau trained under Alain Ducasse before spending four years as head pastry chef at a Michelin three-star house in Lyon. She founded Maison Dorée in 2011 with a single guiding principle: luxury is not decoration, it is discipline. She still personally approves every new item that enters the seasonal menu.

Maison Dorée opens as a six-seat counter in Paris's 6th arrondissement.
2014
First James Beard nomination for "Outstanding Pastry Program."
2017
The Paris flagship expands to include a private tasting salon.
2021
Maison Dorée opens its second atelier on Madison Avenue, New York.

Launch of the Bespoke Cakes atelier for private commissions.
